Ingredients
- rotisserie chicken
- white rice
- bone broth
- lemon wedge
- salt
- pepper
- oregano
- 1-2 bay leaves
- butter
- cream
I don’t measure any of these ingredients besides the bay leaves. I just go by taste! You can add as much or as little of everything as you want.
Also, I know that pepper is labeled as a “high toxicity” spice in the animal based diet. You do not have to add this if your body does not tolerate pepper. Adjust the recipe to your specific diet needs:)
For the rotisserie chicken, I’ve found that Whole Foods has the cleanest option. It’s literally just salt, pepper, and chicken. A lot of other grocery stores add gums, sugars, syrups, and other terrible additives to their rotisserie chickens. So check the label and make sure you’re buying a good, clean chicken!
Directions
- Pull the meat off the rotisserie chicken and break it into bite-size pieces. Then put it in a big pot.
- Add all ingredients to the pot, except for the cream.
- Turn on the stove and let the soup come to a boil. Then lower the heat and let it simmer for a few minutes until the rice is soft.
- Turn off the heat and add cream to the soup.
- You can serve and enjoy it right away or store it in the fridge and wait to eat it the next day. The soup will taste even better since the flavors have had time to marinate overnight!
To ensure you’re staying as healthy as possible, cook with nontoxic cookware. I use stainless steel pots and pans from Cuisinart, and I love them! If you take good care of them, they last a lifetime, so I highly recommend you get some stainless steel cookware if you haven’t already.
To reduce microplastic consumption, pour your soup into a glass, ceramic, or porcelain bowl. These cute bowls are perfect:
